Low fat Almond and Oats Cookie - Eggless
It is amazing that the amount of different varieties of cookies I make, and yet this is my first post on my blog under "Cookies"!
Yay! This day marks the creation of my new label!
And how did I land up on this one? The last place I would look to find a cookie recipe...when my hand reaches the trash can to toss something, nope, it is not yet inside it :) That would be gross!
Just when I was throwing away a plastic bag which previously contatined oat flour. My eyes grew wide and my hands trembled with excitement!
Well, not exactly... I just had to stare hard enough to read the recipe by itself, it was that small !
Yep, found this treasure right there. Lesson learnt.
So the next time look out for those recipes on those packages. You are bound to find something that interests you.
The recipe was in original not a very healthy one, had butter and sugar enough to make me sick. But with a little adjustments, I was able to turn them into the best cookies I have ever tasted! And healthy too.
Trust me on this one okay? I don't give my approval nod that easily, and I promise delight to those of you who care to try it.
It is not that difficult, so what are you waiting for?
Low fat Almond and Oats Cookie - Eggless
Ingredients:
Sifted oat flour - 1 1/4 cup (May substitute by grinding quick cooking oats, and sifting it if you dont have ready made oat flour on hand)
Almond meal - 1 cup (May substitute by grinding whole almonds into a powder)
Butter - 3-4 tbsp
Sugar - 4-5 tbsp (depending on your sweetness level)
Pure Vanilla Extract - 1 tsp
Method:
Preheat oven at 300 F.
Grease cookie sheet and set aside.
Using a hand mixer blend butter and sugar together until creamy (about 4 min)
Add the oat flour, vanilla extract and almond meal and mix with a rubber spatula until well combined.
Form into small balls and place on the cookie sheet. They spread out, so leave enough place between the cookie dough balls.
Bake for about 30 min. Or till slightly cracked and brown on top.
Remove from tray and let them cool. They will firm up on cooling.
You may roll them in more sugar if you want, but I doubt if you can ever keep away from them for that long! They are one of the best cookies ever!
Yields: 20 medium cookies. They are crunchy, not soft.

ReplyDeleteHmm..you have made my life easier..I am always looking out for healthy cookies since we love to munch on them..;-)..am definitely gonna try this one..but I have one doubt-should we bake it for 30 minutes..?I usually bake for 20 minutes on 150*C-300*F and I get crispy cookies..please let me know!!

ReplyDeleteDivya Kudua - Ovens vary, so 30 minutes would be ideal, but you may remove them if they become very slightly brown and cracked on top. They will firm up on cooling.
ReplyDeleteCooker - It would be ideal to sift the oat flour, but not completely necessary. And I used the measurement (markings) on the stick of butter to cut what I needed. You may alternatively use 4 tbsp of softened butter also.

ReplyDeletehey this was a great recipe thanks. I tried it out the same day you wrote and well coz of my mistake i ruined them - kept the oven temp too high and so it got burnt! Still i managed to scarpe and eat whatever was left and loved it. Will bake some more today. Thanks

My mix at the end was kinda dry and falling apart. Not knowing what to do exactly, I just melt a tbsp of butter and added to the mix. Could this have been because I used normal sugar? Should I have used confectioner's sugar?

Hi Anu, I finally tried them out & they were really good , as you said. I used 60gm of soft butter, I did not sift the oat flour, I just pulsed whole almonds with the skin to a coarse powder & though the mix was a bit dry , I used my strength & will power to bring it together & shape the rounds :-) I baked some for 20 min & some for 30. apart from a color difference, they were both good. I notice you dont have an email id on your blog, or else I would have sent you the pics since I have yet to start my blog....thats taking forever to launch into cyberspace ...Even Chandrayaan beat me to it :-)

ReplyDeletePurvi - Do let me know how it went... Normal sugar is what I used too, the dough is crumbly in texture as I mentioned, but you should be able to form a ball with the help of the moisture from the butter and the almond meal. I am doing the Naan post for you next!
DeeplyDip - The oven needs to be set at 300F. Since it has nuts in them, it will burn at higher temperatures or if over baked.
Yeah, you should totally try baking another batch. They are easy, right?
Anu thanks for the email id. I will write soon. Since Purvi was asking, I want to say that I used powdered sugar in the recipe Just lightly pulsed 4 tbs in the mixie !). I always do that with cookies. & as for the dough being dry, one has to keep kneading till the almonds release their oil...just as you said. That gives the sheen to the unbaked balls of dough in your picture.

ReplyDeletethe cookies (they tasted more like good old nankhatai back home) turned out AMAZING! So nice, that my husband refused to share it with some of our friends :P and rather keep them all for ourselves (rather himself) Amazingly easy. I just took a bit of time grinding the oats/almonds that I had. Next time if I make, I will buy readymade oats flour and almond meal to save on some time :D
Thanks to you and cooker for the kneading suggestion. I did start with a rubber spatula to mix all the ingredients (as per the recipe) and then moved to hand kneading (more comfortable) but was scared of messing up the mixture texture. I guess I should have just hand-kneaded it more and would not have had to add butter. Right now the cookies taste a little buttery (which I LOVE BTW) and I am sure that is because of the extra butter I added otherwise your measures would have been perfect.
Also cooker, good idea about grinding the sugar a tad-bit next time.

ReplyDeleteI tried this cookie today and amazing it came out very nice. I felt very happy atlast. Healthy ingredients, not even baking soda is required. I just replace vanilla with elachi powder and it tasted awesome.
