Fresh Blueberry Oat "Cakes on a Pan"

I think whoever discovered pancakes was a dessert fanatic like me and decided to have some indulgence with something sweet first thing in the morning. Seriously that is what my take on cakes on a pan, well pancakes are. I actually like to think that it might have been me in my previous birth, if there existed one. :)

For this recipe, use fresh blueberries if possible, I got mine specifically for this. The reason for using fresh berries is this... when the heat hits the berries on the pan, those little rounds burst open oozing out a beautiful purple juice on the pancake. And my, oh my, seeing that first thing in the morning is a sight to behold.
So, I got a "huge" box from Costco, I used like a cup of berries for this recipe, and the rest is happily stored away. If you are aware of any healthy and easy recipes for blueberries, I would love to know. I need some help using the rest of the box...

I will have to come up with some new wacky recipe that will for sure look good on my picture, which might trick you readers into commenting the ever so famous "Lovely picture, Nice recipe" comment. *wink*

Each and every stuff that went into making my pancakes are exactly what you want to kick off a day, protein from the eggs, whole grains from the whole wheat flour and oats, dairy from the milk, nutritious blueberries, a tad bit of sugar and butter for that feel good factor, and some grease to get you going through the day. All in one long sentence and pancake.

Fresh Blueberry Oat Cakes on a Pan

Ingredients:

Fresh blueberries - 1 cup

Whole wheat pastry flour - 1 cup
Old fashioned Oats - 1/3 cup
Milk - 1-2 cups
Eggs - 2 large
Baking powder - 1/2 tsp
Vanilla - 1 tsp
Butter - 1 tbsp
Sugar - 3 tbsp (or more depending on your sweetness level)

Method:

Cream butter and sugar. Add eggs and using a hand blender whip the mixture till light and creamy.

Add 1 cup milk, vanilla, baking powder and whisk again.

Add flour and oats and whisk well to combine. Do not over mix. The batter should not be runny or too thick. Add more milk at this point if need be. It should be thick, yet in pouring consistency.

Mix the blueberries.

On a hot griddle smeared with some oil, pour the batter in small circles. Do not spread. The batter should flow by itself.
When bubbles start to form on the top surface, flip the pancake over and cook on the other side.

Some berries will break open and give a beautiful purple juice onto the pancake itself. Enjoy it hot from the griddle with some agave, fruit preserves or syrup.

    I am drooling to have some or all of it...
    Try the blueberries crisp - a friend had made it last year and was awesome... It had some oats, brown sugar and cinamon and fresh blue berries... I dont have exact recipe. But you can look it up...

I like the things that went into them..healthy stuffs..Bluberry pancakes are like my daily breakfast now?Did u see mine,with ricotta cheese?Thats a keeper one..cheese makes it melt in your mouth..but err..I dunno ur take on the cheesy part..:D..tons of healthy recipes with blueberry..mix it with some non fat yougurt n flax seeds n make a smoothie..or u can make a preserve out of it..stores for long..:)
    Did u take those pics on early morning?I see that kind of lighting(no chance of me seeing it in real..:D)..loved it..:)

    Varsha - Yes yes, the morning light did that. Those berries just lightened up as the sunlight washed over them.
    I did have some ricotta at home, and I love it. I should have remembered your recipe. Always a next time. Er, which would be tomorrow ;)

  7. fabulous!!! thats a healthy way to start my day..i wish i do those on weekdays as well. I cook wholesome breakfasts only on weekends, weekdays its mostly cereal or just a fruit or sometimes nothing for breakfast, yeah, i know its not a good thing!

    love that second picture of the syrup/honey on the pancakes..looks so lovely and golden in color!

  14. What awesome looking pancakes. I made banana-blueberry ones last weekend and my daughter loved them. As for the remaining blueberries, eat them plain or blend into a smoothie. That's what I do most of the time.

    those pancakes looks good. I don't eat pancakes however I made them all the time for my family and I have used blueberries, strawberries, bananas, apples, grapes and they gubbled it up. Nice entry.

  31. Divya, just eat them plain....that way you do`nt have to take pics and get those lovely comments.
    BTW: I am one who cannot eat anything sweet in the morning. My daughter once asked for Blueberry pancakes and made them for her. The taste as you said was tooo good.

  57. Blueberries stay for a longer time unlike strawberries and raspberries. Do send them over here Divya :-) Other ideas? Blueberry shake, oat blueberry bread, cake? That is all I can think for now :-) Liked the pictured drizzled with syrup.

  60. I always have frozen blueberries in the freezer and that's what I have been using for pancakes. Now after reading what you wrote, I am going to look for fresh ones. :)

  61. Whole wheat pastry flour is definitely a boon. My son loves bb pancakes too, but I use applesauce instead of eggs. He likes the BB muffins too. You should try the recipe I have posted for bb flavored milk.

    If you're still looking for ideas on how to use up your berries, why not try a blueberry crisp or a clafouti? I have recipes for both over on my blog if you're interested. I'm sure you'll come up with some healthy alternatives to the ones out there.;-D

    Roshni - Good lord! Am I going to get another post bashing me up after the pancakes??? Just kidding. Give it a try, your kids will like it. Make sure it (the batter) is thick, or you will be left with bluberries sitting on a pool of watery stuff. Just giving a heads up.
    And if you are making for children... add more sugar than what I called for (at least a couple of tsps more)

  73. Hi anu, regarding u q'n for mango sorbet, no need to add sugar if u go for tinned mango pulp, i used fresh thick mango pulp, thats y i used sugar, hope this helps, thanks a lot for ur encouraging words.

They were a bit thick..note to self:thin the batter a bit more...but if he continues to like these (and 5 year olds are totally unpredictable), then I hope to make these and other fruit variations (?) for him for his before school breakfast...they are really filling!!
