Fat-free Quick Rasamalai



I am not a "feed" savvy person and I don't know why I have been tweaking my feed on my blog! and ended up causing a lot more complications than I knew of. I was working on that to set it right, and hopefully it would start working now. Phew!
And I was hoping this weekend being the long one, the posts would slow down, but except me, looks like every other fellow blogger has been pretty active.

Coming to my recipe for today, I have attempted to make a fat-free version of the quick rasamalai with making the cheese and the milk free of fat. I really could not tell the difference between the one made with full fat ingredients. I am very pleased with the outcome I must say. I did bake the ricotta a little too long, hence the brown edges, if you are careful unlike me, then you can avoid those edges.
And if you are not that finicky about healthy stuff, then substitute with low-fat, or full-fat ingredients. But I don't know why anyone would do that, when this tastes so good :)



Fat- free Quick Rasamalai

Ingredients:

Fat-free Ricotta Cheese - 2 cups
Sugar/Splenda - 1 cup

Fat-free half-and-half milk - 2 cups
Slivered almonds and pistachios - 1/4 cup
Cardamom - 1/4 tsp
Nutmeg - A pinch
Saffron - 1/4 tsp crushed

Method:

Preheat oven to 375F

With a help of a hand blender mix the ricotta cheese and sugar for two minutes till creamy.

Pour into a greased baking pan or a muffin tray (for individual rounds) and bake for about 30-40 min, or until firm to touch and the knife comes out clean when inserted at the center.

Allow to cool for 30 min before cutting into squares.

Boil the milk, add the nuts, nutmeg, cardamom, and saffron. Allow to cool in the refrigerator until chilled.

Pour the milk over the cut squares of cheese/malai, and let soak for at least an hour before serving.

  6. Divya, I loveeee rasmalai and had my fill -full on fat, frm a famous bengali methai store while on vacation! But ur fat-free version looks just superb n mouthwatering, wd surely try it...(BTW loved glancing thru all the yum food-u click so well-tks for ur comment at my space!!)

  10. THat looks delicious Divya.. For some reason the baked Ricotta rasmalai recipe didn't work for me before.. i felt like it didn't absorb the flavours of the rabdi.. But i want to try this yet again because it looks yummo.

  15. I remember having seen the recipe then, whe you posted it. Looks lovely! Now, i have one question: what is fat free half and half. I got to know (though blogging:))tht half and half means half cream and half milk. Now I wonder what fat free half and half could mean? I will have to find an appropriate replacement for this if only i knew what that is? Thanks a lot!

  17. PG - Good question. I just checked my carton, and it lists Ingredients as Non-Fat milk, Corn syrup, Cream and a whole bunch of other ingredients. One serving (30 ml) has about 20 calories and no calories from fat.
    I don't know how they make it fat free, but it works.
    Other alternatives could be mixing two different types of fat-free milk/cream by yourself or even better would be "Fat free Evaporated milk" which is basically Condensed milk minus the sugar, so it is not as gooey as the latter. Hope that helps PG!

  18. Thanks a lot anudivya! I was also thinking on those lines of using evaporated milk. Right now we have had enough of sweets, but i will surely try it with fat free ricotta once the craving for sweeets come back. :) I had tried rasmalai with regular ricotta and hubby and me found it to be too creamy or call it fatty!
